At La Maddalena, the day’s catch remains the clearest expression of local cuisine. Dentex, amberjack, octopus and shellfish are grilled simply or served in seafood soups, pasta sauces and fregula, while spaghetti with mullet bottarga is a dependable island favourite. The nearby Gallurese countryside supplies pecorino, cured meats and roast dishes, creating a menu that reaches beyond the sea. Seadas with honey and artisan gelato—sometimes flavoured with myrtle, toasted almonds or strawberry-tree honey—provide the sweet finish, accompanied by Vermentino di Gallura.
